Spring Rhubarb!

Just look at this rhubarb from Sister Sage Farm! Jayne sent me this photo the other day, and I wasn't even sure what kind of plant is was. Rhubarb is part of the buckwheat family and can be used in all kinds of recipes. The stalks are also rich in vitamin C, K, and also are a good source of fiber. As you can see the plants once established can get huge!
